Rich & Indulgent Fettucine Alfredo Recipe

In keeping with my resolution to reduce the amount we spend on food and eating out, I did a grocery store and Shoppers Drug Mart run today. Although it would’ve been smarter to plan my menus only based on what was on sale, I had a craving for pasta and already had most of the ingredients (other than parsley, 99c, and heavy whipping cream, $4.99) at home. And so, without further ado, I present to you a very rich Fettucine Alfredo recipe. It’s delightful but don’t indulge in this one too often, lest you need an entirely new wardrobe! 😉

  • 1 cup butter
  • 6+ gloves of garlic, minced finely (if you like garlic, increase this)
  • 4 cups heavy whipping cream
  • 1/4 tsp black ground pepper, or to taste
  • garlic salt
  • 1 cup freshly grated Parmesan cheese
  • Fettucine pasta
  • Parsley, finely chopped

Step 1: Melt butter in a saucepan.

Step 2: While the butter is melting, chop the garlic and prep the cream, salt and pepper. Grate the Parmesan cheese. I buy mine in huge blocks from Costco and keep them in the freezer, then I need to use it, I cut off chunks and use the circular cheese grater. I purchased mine from Williams Sonoma last year and while I like it better than the handheld graters, I do find it hard to grip if you’re grating a lot of cheese. My mom has a much better one that she said she bought from Kitchen Stuff Plus, but I don’t see it on the website at the moment. If/when I find hers, I will most certainly share it here!

Step 3: Once the butter has melted, throw in the garlic, salt and pepper. Leave it for a few minutes and let the garlic get nice and aromatic, but don’t let it brown.

Step 4: Add the cream and bring the mixture to a simmer, but don’t let it boil.

Step 5: Add the cheese, and continue to simmer the sauce until it has thickened. This will probably take at least 10 minutes.

Step 6: While the sauce is simmering, boil your pasta, then drain and rinse under cold water when done.

Step 7: Dish the pasta into your bowls, pour a generous amount of sauce on top and garnish with parsley. You can add more Parmesan cheese on top too! Stir it up nicely then ENJOY!

Pre-stirred pasta, no additional grated Parmesan cheese.

This amount fed 4 adults, with plenty of sauce leftover. To reheat, put the sauce back on the stove and simmer in a pot – this does not microwave well!
